ZUCCHINI PIZZA BITES



I am always looking for healthier versions of my favorite junk food. Let's be real: some of the fad "diet" recipes out there are straight up disgusting. This recipe in particular is FABULOUS! It is super simple and turns out delicious. Give it a try if you are looking for a gluten-free or low carb pizza option.



INGREDIENTS:
  • 6 small zucchinis 
  • 1 Tbsp olive oil
  • 1 Tbsp garlic powder
  • Salt & pepper (to taste)
  • Oregano flakes
  • Marinara or pizza sauce
  • Shredded mozzarella cheese 
  • Turkey pepperonis slices (quartered)  
DIRECTIONS:
  • Preheat oven to 400 degrees and line a baking sheet with parchment paper
  • Cut zucchinis lengthwise and pat dry with a paper towel to absorb excess moisture
  • Lay flat on baking sheet
  • Add garlic to olive oil in a small bowl & brush over zucchini 
  • Lightly salt and pepper
  • Spoon marinara onto zucchini
  • Sprinkle with mozzarella 
  • Sprinkle with oregano and a little more garlic powder
  • Add turkey pepperoni 
  • Bake for 18 minutes & enjoy!
