I am always looking for healthier versions of my favorite junk food. Let's be real: some of the fad "diet" recipes out there are straight up disgusting. This recipe in particular is FABULOUS! It is super simple and turns out delicious. Give it a try if you are looking for a gluten-free or low carb pizza option.
- 6 small zucchinis
- 1 Tbsp olive oil
- 1 Tbsp garlic powder
- Salt & pepper (to taste)
- Oregano flakes
- Marinara or pizza sauce
- Shredded mozzarella cheese
- Turkey pepperonis slices (quartered)
- Preheat oven to 400 degrees and line a baking sheet with parchment paper
- Cut zucchinis lengthwise and pat dry with a paper towel to absorb excess moisture
- Lay flat on baking sheet
- Add garlic to olive oil in a small bowl & brush over zucchini
- Lightly salt and pepper
- Spoon marinara onto zucchini
- Sprinkle with mozzarella
- Sprinkle with oregano and a little more garlic powder
- Add turkey pepperoni
- Bake for 18 minutes & enjoy!
